Hi all! I have a son who plays on two sports teams pretty much year round. It's started up full-on again since August and I again find myself struggling with what to have ready for dinner when we get home from practices especially since school has started back. We are a practice 4-5 nights a week from 5:30-7:30. Any easy dinner ideas you can share that can be made in the crockpot or ahead of time? I'm looking for yummy but simple! Not a ton of prep or ingredients. We are tired of expensive and unhealthy fast food. Thanks in advance!

I love Swiss steak in the croc pot. Super easy. 5 or 6 round steaks, 2 cans of cream of mushroom, 1/2 an onion. Thrown in croc pot for like 6-8 hours depending on whether or not steak is frozen. We usually serve with mashed potatoes and green beans. Another favorite that I turned into a croc pot dish was a family recipe of terriyake chicken. I never made cause it always seemed to take to long to make so my dh suggested throwing all together in the croc pot. We ended up liking it better. 1/2 cup lemon juice, 1/2 cup soy sauce, 3T brown sugar, 4 cloves of garlic, 3/4 t ground ginger, and how many ever pieces of chicken you want. For about 4 hours. I usually don't measure out lemon juice and soy sauce just pour it in, just be careful not to add to much lemon juice unless you like it lemony tasting. We usually make a party potato (mashed potatoes with cream cheese and sour cream baked together) or just a box of rice pilaf with a frozen veggie medley. Another of are fav quick dinners is the chiken premade tamalas from Costco with just a can of refried beans. Hope those give you some ideas. Haley

LOL Tammy, we try! But sometimes we are rushing from school to home for homework and then to practice for sometimes 2.5 hours. That's why I need to start planning ahead!

Christine, I hear ya! It's so hard to keep up! Our kids start swim team and I am finding myself stressed out over how I am going to have dinner ready and get in all the other stuff that needs to happen! Tammy

I usually make chicken stew with lots of veggies in them in a crock pot ,as it's my kid's favorite..They love it..It's full of nutrients ,and a complete meal...healthy !
