Casseroles are an easy way to get an entire meal in one dish, but often are filled with creamy soups and other unhealthy choices. Are there any tasty, healthy options?

I'm a runner, and am getting tired of chowing down on spaghetti and sauce. I'm also guessing it would be good to get more into my body besides carbs and tomatoes before a long run. What's a good night-before-a-race meal that I can make that everyone will like and will keep my energy up throughout the run?

I have three little grandsons who love to eat but do not like much in the way of meat.  Any dinner ideas for non-meat lovers would be greatly appreciated!
